Dan Schroeder has run the kitchen at Park Heights for years. We sat down with him to get a look behind the scenes at this downtown cornerstone.
Park Heights is known for its fresh fish, creative Southern and American cuisine, and its rooftop view of downtown Tupelo. A Massachusetts native, Chef Dan has cooked for over 30 years. His approach is rooted in locally sourced ingredients paired with a menu that balances Southern traditions and advanced techniques. After working in restaurants as a teen, Chef Dan attended culinary school shortly after graduating high school. The first dish he ever mastered was New England-style fish and chips.
On how the local culture has influenced his cooking approach: It's different coming down here. I'm not used to cooking grits, greens, and things like okra. It was fun to learn those techniques, and I really appreciate it now.

WHERE DO YOU EAT WHEN YOU EAT OUT IN TUPELO?
I usually go to Cafe 212 or Blue Canoe. Andrew does a really good job over there; they have some great menu options.
IF YOU COULD COOK FOR ANYONE DEAD OR ALIVE, WHO WOULD YOU CHOOSE AND WHY?
My guy Pedro Martinez from the Red Sox! He'd be fun to have at the table. He appreciates good food; we could do some cool Dominican food.
WHAT'S YOUR FAVORITE UNDERRATED DISH?
I like Uni (Sea Urchin); you really don't see it a lot on menus.
WHAT IS AN OVERRATED DISH?
Catfish. Not a huge fan.
WHAT'S ONE UNIQUE THING ABOUT THE TUPELO FOODIE SCENE THAT PEOPLE SHOULD COME HERE TO EXPERIENCE?
It's a small town, and we have a lot of good ethnic restaurants and fresh seafood.
