Tiffany Grice founded Kreecher's Creations back in July 2023, opening the door for her baking passions to be fully realized. We sat down with her to take a closer look at the woman behind Tupelo's first and only French-style patisserie.
Kreecher's Creations, located on McCullough Blvd, specializes in gourmet croissants. Grice has perfected her recipe, blending classic French pastry techniques with regional flavors and her own creative twists.
Grice began her baking journey with the Easy Bake Oven, which propelled her to become the primary baker for her family. Although her business centers on croissants, the dish has not always been her specialty. Croissants were pretty much my Goliath. The recipe is very intimidating; it's a pretty long process. It takes three days to make croissants. After continuously putting off the recipe, she finally gave it a shot and has not stopped since.
On what culinary styles have influenced her approach the most: Definitely the European and Asian styles ... bread is just so infinite; there are so many things to learn, and I think that's what keeps me engaged. There are so many things to learn, and I want to learn all of it.
A conversation with Tiffany
WHAT'S A DISH YOU'VE NEVER MADE BUT WANT TO TRY?
I'm really interested in Asian style breads like sweet buns. I'd also like to learn to make an Italian-style bread like Panettone, which takes 72 hours to make and is really popular around the holidays.
WHAT DOES A TYPICAL DAY LOOK LIKE FOR YOU IN THE KITCHEN?
When I first come in, we get breakfast prepped and ready. I put out our sweet croissants. Right now, we're doing a brown sugar cinnamon Pop-Tart croissant, which is very good. After that, I move over to the dough shooter and start laminating croissants for the rest of the day.
WHAT DO YOU WISH MORE PEOPLE KNEW ABOUT BEING A CHEF?
Being a pastry chef is hard work, but also very rewarding work ... At the end of all your hard work, when you see someone enjoying your food, that's what makes it all worth it. It's definitely not as easy as it looks, but it's so worth it.
WHERE DO YOU EAT WHEN YOU EAT OUT IN TUPELO?
I love supporting local; some of my favorite foods come from food trucks: Miss Edible Bliss, Local Mobile, and of course, Big Tae's.
WHAT'S UNIQUE ABOUT THE TUPELO FOOD SCENE THAT PEOPLE SHOULD COME HERE TO EXPERIENCE?
We have so much talent in the Tupelo food scene. You can find any type of cuisine here. I can't wait to see how the local food scene grows in the future. There are so many people here where all they need is a foot in the door and a place to do it.
